Development of high-performance viscosifiers and texture ingredients for industrial applications based on Cellulose Nanofibrils (CNF)
Nanocellulose is a new biobased nanoscaled material which is approaching industrial scale production. One characteristic and highly interesting feature of nanocellulose is the ability to form viscous dispersions at low consistencies and at the same time strong shear-thinning behaviour. Nanocellulose has also very good emulsifying properties and may thus replace other emulsifying agents.
In the NanoVisc project fundamental research on nanocellulose dispersions, emulsions, colloids and gels is performed.
This is of particular interest for foodstuffs, cement and all viscoelastic materials that may utilize nanocellulose. A fundamental understanding of the rheology of multi-structural systems will be established that will help in development of new products.
